Paring knife, English style, left handed

The English paring knife is characterised by its lack of handle.Some users wrap tape around to make that end of the blade more comfortable. The absence of the handle enables the blade to be used at a very fine angle. This knife, with the left handed blade, is normally used to pare from right to left. It can be used in this way equally well by left or right handed people. To cut from left to right we advise using the right handed knife. 

The French paring knife has a shorter blade and a more normal ~ wooden ~ handle, and the blade is invariably curved to suit users preferences. (Left-handed, right-handed, or both!) Curved blades require more skill to sharpen and hone than straight blades.
